However, if we peel back the layers of history and geography, we find core
principles and techniques that form the backbone of Chinese cooking. At its
heart, Chinese cooking is about simplicity, balance and harmony. A dish
may balance the crunchiness of a deep-fried morsel with the softness of
steamed rice or combine the freshness of vegetables with the depth of a
